Pandecorny is an artisan bakery that was created with the aim of recovering traditional production processes. For this, we have the experience of Iván Cañás, a fifth generation baker from Carral, where bread making is an art that is passed down from father to son.

We bake more than 15 different varieties of bread every day, made with authentic sourdough and long fermentation processes. We use only top quality ingredients to guarantee our customers products with lots of flavour. At Pandecorny we believe in returning to the essences of the land, returning to the smell and taste of authentic artisan bread. For this reason, we are committed to respecting and recovering this great millenary trade.
Fifth generation bakers
Iván Cañás, raised in a family of bakers with several generations of tradition, began his immersion in the world of bread at an early age in the family business. The artisan bakery in the municipality of Carral, known for the exceptional quality of its bread, was their playground of imagination, turning baskets of bread into houses and cars.
At the age of four, the family moved to Coruña, setting up a small bakery. Here, Ivan has his first memories of the delicious puff pastry with cream, the aroma of which evokes his childhood. Despite his youth, he began to get involved in baking, experimenting with doughs and baking, following in the footsteps of his father, whom he admired.
As he grew up, Ivan combined his studies with his responsibilities in the bakery, but at the age of 17 he expressed his desire to follow the family tradition as a baker. Although he was initially persuaded to study medicine, he returned to Coruña every weekend to contribute to the bakery, keeping his passion alive.
After completing his studies, Ivan decided to return to his roots and take up the family profession. Thus was born Pandecorny, his personal project, where he says that, despite the sacrifices, the profession of baker is rewarding. With determination, he has brought to life the fifth generation of bakers in his family.
Sourdough
Iván Cañás is an advocate of sourdough. For years he has been experimenting and studying the processes surrounding this natural ferment that is so beneficial to people. At Pandecorny the sourdough used is about 10 years old, which started with local apples and sultanas.
